Baked Apricots with Goat Cheese & Pistachios
Scrumptious with a dessert wine

ripe apricots |

jar Coonridge Black Peppercorn Organic Goat Cheese |
| 1/2 |
cup pistachios |
| 1/4 |
cup pecans |
| 1/4 |
cup honey |
| 1 |
dash nutmeg |

large lemons |
| 1 |
large orange |

Cut the apricots in half |
| 3 |
Chop the pistachios and pecans (not finely) and finely toast |

Juice the lemons and orange |

Mix the juice |

Preheat your oven to 400 degrees Fahrenheit |

Place apricots pit side up in a pie plate |

Pour juice on the apricots |

Drizzle honey on the apricots |

Sprinkle nuts and nutmeg on top of the apricots |

Bake for 20-30 minutes according to your preference |
